Diploma in Bakery and Confectionery

Diploma in Bakery and Confectionery program envisages providing students with knowledge of the basic functioning of the industry. Candidates who wish to pursue a career in Bakery and Confectionery making can find this course to be a lucrative opportunity to enhance their skills. Applying the varied skills into the field, students gain a deeper understanding of the subject as well as expand their knowledge related to the art of Bakery and Confectionery. Along with rendering students with the basic knowledge of the program, they are also imparted the skills of communication and creativity. Diploma in Bakery and Confectionery curriculum is designed in a manner, wherein candidates get the knowledge of both practical as well as the theoretical aspect of the program, laying a stronger foundation to pursue training in Bakery and Confectionery. The topics covered include the study of commodities used in Bakery/Confectionery, the process undertaken, selection, composition, functions, and reactions to the ingredients, basic knowledge of baking/heating, refrigerating, freezing, chilling and the interaction of the elements used. Candidates develop the ability to assess the characteristics of quality of baked food, understand the faults and apply the necessary measures to correct them. This field of study opens up lucrative options for candidates to work in hospitality sectors of restaurants, airlines on national and international sectors. Diploma in Bakery and Confectionery course aims to skill aspirants with the basics and advanced knowledge of the program making it a beneficial course for pursuing higher studies and research program.

The course contents are as follows: 
(a) Bakery – Theory & Practicals.
(b) Confectionery – Theory & Practicals.
(e) Hygienic & Sanitation – Theory
(d) Commodities – Theory
(e) Computer Awareness – Practicals

(f) Food Costing – Theory
(g) Industrial Training – 6 months.

The Eligibility & Teaching Scheme for diploma in Bakery and Confectionery Eligibility: Senior Secondary (10+2) or equivalent with (English as compulsory subject)

Duration: One year + Six months industrial training
Teaching hours per week: 35
Industrial Training: 24 weeks
